Pigeon pea is a warm-weather legume that grows as a small shrub. It has yellow flowers and flat pods containing round seeds, usually tan, brown, or speckled. The seeds are dried and split for storage. Pigeon peas are made into soups, stews and dal, especially in India and the Caribbean.
