C is for Chili sauce

Chili sauce is a spicy condiment made from chili peppers, often mixed with vinegar, tomatoes, garlic, sugar, or salt. It might be blended to be smooth and pourable or just roughly mashed up to be thick and chunky. People use chili sauce as a dip, a topping, or a cooking ingredient.

C is for Chutney

Chutney is a very general term for any kind of sauce that is made from preserved vegetables. Chutneys are usually spiced too. Chutneys can be preserved by pickling them with acid, either vinegar, citrus juice, or pickled with brine. Chutneys can be very hot and spicy, or very sweet. They are often used in Indian and Asian food.

J is for Jam

Jam is cooked fruit, preserved with sugar. Jam is delicious spread on toast. In some countries, jam is called jelly.

L is for Lemon curd

Lemon curd is a thick, smooth spread made from lemon juice, lemon zest, sugar, eggs, and butter. It is gently cooked until it becomes creamy and bright yellow.

Lemon curd originated in England. It can be used like jam, or as a filling for pastries.

L is for Lemon juice

Lemon juice is the pale, watery liquid squeezed from lemons. It has a very distinctive sharp, sour taste and contains natural acid. People add it to drinks and sauces for the flavor.

M is for Marmalade

Marmalade is a way of preserving citrus fruits like oranges and lemons. Marmalade made in the same way as jam, but jam is a name for preserved fruits that are not citrus.

M is for Mayonnaise

Mayonnaise is a thick, tangy spread made from oil, egg yolk and vinegar or lemon juice with salt added for flavour.
Mayonnaise is often used as part of a salad dressing, or as a spread on sandwiches.
Mustard sauce is a yellow or brown condiment made from ground mustard seeds mixed with vinegar, water or oil. It may be smooth or slightly grainy, and its taste can range from mild to hot depending on the amount and type of mustard and other herbs and spices.
Peanut butter is a spread made from ground, roasted peanuts, with a little salt and oil added. Peanut butter is delicious on sandwiches.

P is for Pesto

Pesto is a sauce made in a mortar and pestle. It is made by grinding up basil, garlic and coarse salt, then adding pine nuts and olive oil and mixing it all together.
Pesto is usually served simply by stirring it through some pasta.

S is for Soy sauce

Soy sauce, also called soya sauce, is a sauce made from fermented soybeans, water and salt. Soy sauce has a distinctive savory flavor, and is an ingredient in many Asian dishes.

T is for Tahini

Tahini is a paste made from ground up sesame seeds. It is a major ingredient in hummus.

V is for Vinegar

Vinegar is a liquid made from wine, in a process that turns the alcohol in the wine into acetic acid. Vinegar has a different flavour depending on what kind of wine was used to make it. Balsamic vinegar is very dark, rice wine vinegar is very light and apple cider vinegar is yellow.
Vinegar is used to make sauces like ketchup, to preserve fruits and vegetables by pickling, and to dress salads.
